- Traditionally gathered from wild-flowering purple heather in the Scottish Highlands since 1945
- Short production season with a unique palate as dictated by its terroir
- Not heated over the normal temperature of the hive to retain its natural goodness and superior flavour

Known as the ‘Champagne’ of honeys, this is our signatory honey of Scotland, won from wild-flowering purple Ling heather (Calluna vulgaris ) in the Scottish Highlands between July and September of each year. An intense, warm, floral aroma, with an assertive palate and full-bodied malty finish – its distinctive flavour is renowned amongst enthusiasts. Highly prized for its health benefits, research has found it to be just as effective as Manuka in of its antimicrobial activity. Use as a glaze for pork, ham, game, poultry, salmon and trout, and also in cakes, bread and ice cream. Pair with Stilton, Cheedar, Scottish Crowdie or a semi-aged Goat's Cheese.Harvested October 2022.
